Nopalize: Nopalito: On Mexican Cuisine and the Nopa Paradox

Notes from one of our favorite SF restaurants…

nopasf:

For the last month or so, I’ve been observing Nopalito, the sister restaurant of Nopa. I’ve gone in the mornings to watch them prepare for lunch service. I’ve dined there frequently to taste through the menu. I’ve watched them prepare for large off-premise events. I’ve even spent an entire day…

Hog Farming: Modern Trends in Swine Production c. 1961

This is basically the complete opposite of how pigs are raised now.

Compare and contrast here:

Would it be such a terrible idea if, instead of agribusiness as usual, we were to promote sustainable local food systems as a way to rebuild rural economies and improve access to healthy food? Would it be so awful if we were to support family farms rather than factory farms? What would happen if we had food and agriculture policies that sought to benefit the environment, public health, and rural communities rather than serve industrial agribusiness? What if we made factory farms, rather than taxpayers, pay to prevent or clean up the pollution they create? What if we subsidized healthy foods rather than unhealthy ones?
